Ingredients
  

Gorgonzola Sauce

  • 2 cups heavy cream
  • 2 cloves of garlic sliced in half lengthwise
  • 2 oz gorgonzola cheese crumbled
  • 3 tbsp freshly grated parmesan cheese
  • 1 tsp dijon mustard
  • ¼ tsp salt
  • ¼ tsp freshly ground black pepper

Steaks

  • 2 Denver Steaks whole or cut into smaller steaks
  • 1 - 2 tbsp olive oil
  • 1 tbsp chopped parsley for garnish

Instructions
 

  • Set the steaks out at room temperature for 1 hour before cooking.

Make the Gorgonzola Sauce

  • In a large saucepan over medium-high heat, bring the heavy cream and cloves of garlic to a boil. Let it boil for approximately 15 minutes, stirring occasionally, until it reaches a thick and creamy consistency (it will coat the back of a spoon).
  • Remove from the heat. Remove the garlic and discard. Add the gorgonzola cheese, parmesan cheese, dijon mustard, salt and pepper, using a whisk to combine. If it’s too thick for your liking, add some cream and whisk. Set it aside.

Sear the Steaks

  • Preheat the grill to high heat.
  • Pat the steaks dry with a paper towel. Drizzle with oil and season the steaks on both sides with salt and pepper.
  • Sear the steaks for 4 minutes per side, or until they reach your desired temperature and they are nicely browned.
  • Transfer the steaks to a plate and loosely tent with foil to rest for 10-15 minutes before serving.
  • Season to taste with salt and pepper. Slice the steaks against the grain. Garnish with parsley and serve with warm gorgonzola sauce.

Notes

The gorgonzola sauce is served warm. If you must rewarm the sauce, heat it gently over stove top and whisk to combine.
