For the chipotle mayo, combine the mayonnaise, chipotle sauce, lime juice, smoked paprika and salt in a small bowl.
To prepare the fries, start by placing them in a bowl of cold water and use your hands to stir them around, which will help remove some of the starch. Then, drain and rinse the potatoes and remove any excess water.
Heat oil in a deep fryer or pot to 300°F, add the potatoes and fry for 3 minutes. Use a slotted spoon to remove the fries and place them on a paper towel lined plate.
Once ready to serve, turn up the heat to 350°F and cook for an additional 3-5 minutes until golden brown. Transfer the fries to a bowl and season with salt.
For the steak, preheat a medium frying pan with oil on medium-high heat.
Pat the steak dry with a paper towel and season it on both sides with salt and pepper.
Add a steak to the pan, cooking in batches so that you don’t crowd the pan. Cook the steak on one side for 3-5 minutes. Flip the steak and add in the thyme, garlic, and butter. Baste the steak while cooking. Repeat for the remaining steak (add more oil and butter if needed).
Remove from the heat and let it rest for 10 minutes before slicing. Serve with the chipotle mayo and fries.
