The only way you’ll want to eat Asparagus this spring. This dip is bright, fresh and addictive!
You can also try this Lemon Tarragon Dip with other grilled veggies, such as sweet potato and zucchini. Just be sure to grill the veggies so they are still firm and dippable (not mushy!). Fill a platter with grilled veggies in a variety of colours for your next backyard BBQ. This recipe can be served as a side dish or even an appetizer.
Asparagus is available in Ontario in the months of May and June. Make sure you select the freshest asparagus that is bright green and firm. The tops should be closed and compact. Thinner asparagus stalks are usually more tender, while very thick stalks might be woody. Fresh Ontario Asparagus can be purchased at your local farmers market or farm shop. Enjoy asparagus while it’s available because the season is short!
Grilled Asparagus with Lemon Tarragon Dip Recipe
Grilled Asparagus
1 bunch of Ontario Asparagus
Extra Virgin Olive Oil
S&P
Lemon Tarragon Dip
½ cup mayonnaise
1 tbsp tarragon, finely chopped plus some sprigs for garnish
1 tsp chives, finely chopped
2 medium garlic cloves, minced
½ tsp Dijon
Zest of half a lemon
1 tsp lemon juice
Salt
Freshly ground Pepper
Rinse the asparagus and remove the ends. Coat lightly with EVOO and season with salt and pepper. Place on the grill at high heat for 2-3 minutes, turning the asparagus until the desired doneness is reached. You want them to be firm enough to dip.
To make the dip, add the mayonnaise, tarragon, chive, garlic, Dijon, lemon zest, and lemon juice into a bowl and whisk together. Season to taste with salt and freshly ground pepper. Garnish with springs of tarragon.
Serve the asparagus warm with a side of the Lemon Tarragon Dip and watch it disappear!
