Steak frites is a classic French dish consisting of a juicy steak and crispy, golden fries. It’s simple, yet sophisticated, and it’s perfect for any occasion.

Now, let’s talk about the steak. When it comes to steak frites, not all steaks are created equal. You want a steak that is flavorful and tender, with just the right amount of marbling. Personally, I love using flat iron steak for my steak frites. It’s a lesser-known cut, but it’s incredibly flavorful and it cooks up beautifully. Plus, it’s affordable, so it won’t break the bank.

But how do you pronounce steak frites, you might ask? Well, it’s pretty simple. The “steak” part is pronounced like you would normally say it, but the “frites” part is pronounced “freets.”

Now, for the main event: the recipe. This Flat Iron Steak Frites with Chipotle Mayo is a sure-fire hit. The steak is cooked to perfection, and who doesn’t love hot fries? The chipotle mayo adds a spicy kick that really takes this dish to the next level.

To create our chipotle mayo, we opted for a simple yet delicious approach. We started by mixing mayonnaise, salt, and fresh lime juice with a delightful chipotle sauce from a local artisan. Ingredients
  

Chipotle Mayo

  • 1 cup mayonnaise
  • 1 - 2 tbsp chipotle sauce alternatively use canned chipotle pepper
  • ½ lime freshly squeezed
  • 1/2 tsp smoked paprika optional
  • Kosher salt to taste

Fries

  • 2 russet potatoes cut into batonnet slices
  • Sea salt

Steak

  • 2 Flat Iron Steaks
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1 spring of thyme
  • 2 garlic cloves

Instructions
 

  • For the chipotle mayo, combine the mayonnaise, chipotle sauce, lime juice, smoked paprika and salt in a small bowl.
  • To prepare the fries, start by placing them in a bowl of cold water and use your hands to stir them around, which will help remove some of the starch. Then, drain and rinse the potatoes and remove any excess water.
  • Heat oil in a deep fryer or pot to 300°F, add the potatoes and fry for 3 minutes. Use a slotted spoon to remove the fries and place them on a paper towel lined plate.
  • Once ready to serve, turn up the heat to 350°F and cook for an additional 3-5 minutes until golden brown. Transfer the fries to a bowl and season with salt.
  • For the steak, preheat a medium frying pan with oil on medium-high heat.
  • Pat the steak dry with a paper towel and season it on both sides with salt and pepper.
  • Add a steak to the pan, cooking in batches so that you don’t crowd the pan. Cook the steak on one side for 3-5 minutes. Flip the steak and add in the thyme, garlic, and butter. Baste the steak while cooking. Repeat for the remaining steak (add more oil and butter if needed).
  • Remove from the heat and let it rest for 10 minutes before slicing. Serve with the chipotle mayo and fries.
