Ingredients for Sausage and Sauerkraut Soup

This Sausage and Sauerkraut Soup can be as versatile as you like! If you’re looking for a traditional flavour, kielbasa is a perfect choice. However, if you’d like to switch things up a bit, try using a sweet sausage like Apple Maple Bacon Sausage. The sweetness of the apples will balance out the sourness of the sauerkraut. If you prefer a sweeter soup, you can also try adding more cider to the soup.

Removing the casing from the sausage is easily done by slicing the casing length-wise. The casing will come off quite easily.

Sausage & Sauerkraut Soup

Sausage sauerkraut soup is a comforting bowl of onions, carrots, potatoes, celery, pan fried sausage and sauerkraut all simmered together.

Ingredients
  

  • 1 lb smoked sausage diced, such as kielbasa or Heatherlea's Apple Bacon Maple Sausage with casing removed
  • 1 large white onion finely chopped
  • 2 ribs celery finely chopped
  • 2 carrots finely chopped
  • 1 tbsp minced garlic
  • 1 cup apple cider
  • 1 tbsp apple cider vinegar
  • 4 cups sauerkraut
  • 8 cups chicken broth
  • 1 cup peeled and cubed potatoes
  • 3 springs fresh thyme stems removed and chopped
  • 1/2 tsp ground black pepper
  • 1 cup whipping cream
  • Kosher salt to taste

Instructions
 

  • Heat a large soup pot over medium-high heat and add the sausage. Cook until the sausage is caramelized and the fat is rendered.
  • Add the onions, carrots, and celery and cook, stirring occasionally, until the vegetables have softened, about 4 minutes.
  • Add the garlic and stir. Cook for 1 minute. Add the apple cider and apple cider vinegar and cook until almost completely reduced.
  • Add the sauerkraut, broth, potatoes, thyme, and pepper. Bring to a boil.
  • Reduce the heat to a low simmer and cook, stirring occasionally, until potatoes and sauerkraut are tender, about 45 minutes to 1 hour.
  • Remove from heat and add in cream. Taste and adjust seasoning if needed.
