This Tequila Lime Chicken is the perfect recipe for your next cookout! The chicken is juicy and moist from the fresh lime, garlic and tequila marinade, and it pairs perfectly with the fresh Peach Salsa. The salsa takes just minutes to make with sweet Ontario peaches, red onion, red bell pepper, cilantro, jalapeño pepper and lime juice. This is a great way to use Ontario Peaches while they are in season!
Tequila Lime Marinade
1/2 cup gold tequila
3/4 cup freshly squeezed lime juice (about 6 limes)
1/2 cup freshly squeezed orange juice (about 2 – 3 oranges)
1 tbsp chili powder
1 tbsp minced fresh jalapeño pepper (1/2 pepper seeded)
1 tbsp minced fresh garlic (3 cloves)
1 tsp kosher salt
1 tsp freshly ground black pepper
6 – 8 chicken thighs (boneless, skinless)
2 cups peeled, diced fresh peaches
1/4 cup finely diced red onion
1/4 cup seeded and finely diced red bell pepper
1/2 whole jalapeño, seeded and minced (include some seeds for spice)
2-3 tbsp chopped fresh cilantro
1/8 tsp chili powder (more to taste)
Juice of 1 lime
Dash of salt
Marinate the chicken: Combine the tequila, lime juice, orange juice, chili powder, jalapeño pepper, garlic, salt, and pepper in a large bowl. Add the chicken thighs, cover and refrigerate overnight.
Make the Peach Salsa: Using a medium bowl, combine the peaches, red onion, red bell pepper, jalapeño, cilantro, chili powder, lime and salt. Adjust the salt and chili powder to taste. Cover and refrigerate for 1 hour before serving.
Cook the chicken thighs: Preheat the grill to medium-high heat. Remove the chicken from the marinade and season well with salt and pepper. Grill both sides until browned and cooked through (165F). Remove from the grill, tent loosely with foil and allow to rest for 10 minutes.
